Flounder Stuffed with Spinach and Cheese

Servings: 2 servings

Ingredients

  • 4 medium sized flounder fillets, about 1 lb you could also use 2 bigger fillets
  • ½ tsp. SoFishticated available at Harbor Fish or a seasoning of your choice
  • olive oil
  • For the Stuffing
  • 3 oz. cream cheese
  • ½ cup feta cheese
  • 1/2 cup baby spinach chopped
  • lemon wedges

Instructions

  • Combine the cream cheese, feta, and chopped baby spinach into a mixing bowl. Mix until it becomes semi smooth. It will be quite thick. Set aside.
  • Lay out the flounder fillets, pat dry, and sprinkle seasoning onto each fillet.
  • Divide the stuffing into equal portions, amount depending on how many fillets. Using the back of a spoon, spread the stuffing to cover as evenly as possible. Then starting from the tail, roll each fillet and place it seam side down on the baking dish. If it needs, you can place a toothpick into it to hold.
  • Sprinkle more seasoning on top and drizzle olive oil over the fillets.
  • Bake at 350ºF for about 20-24 minutes, until the fish is cooked through.
  • Serve with lemon wedges, the lemon gives just the right kick of citrus to round out the rich cheesy filling.
