Ingredients
- 1 lb fresh lobster meat
- 2 small ripe mangoes or 1 big one peeled and diced
- 1 ripe papaya peeled and diced
- 1/2 cup red pepper diced
- 1/2 cup green pepper diced
- 1/2 cup celery diced
- 2 japaleno peppers (or to taste) seeded and finely minced
- 2 tbsp chives minced
- 1/2 cup mayonnaise Preferably Hellmann's
- 1/2 cup non-fat Greek yoghurt
- 1 tsp lemon juice
- 1 tsp olive oil
- 1 tsp tarragon crushed
Instructions
- Chunk up the lobster meat and mix with lemon juice, olive oil and tarragon. Marinate about 10-15 minutes.
- Mix together the yoghurt and mayonaisse.
- Add remaining ingredients to the lobster meat. Mix in a little of the mayo/yoghurt blend at a time until you reach your desired consistency. Don't over do it!
